Understanding an Olive Oil COA

How professional buyers can read a certificate of analysis without confusing a test result with a complete supply guarantee.

What a COA establishes—and what it does not

A certificate of analysis records results for an identified sample or lot at a stated time. It can support category, purity and specification review, but only when the lot reference, laboratory, date and methods are clear.

A COA does not by itself prove current stock, ownership, certification scope, traceability of every transfer or conformity after loading. Those questions need their own records and contractual controls.

  • Identify the laboratory and test methods
  • Confirm units, limits and pass/fail basis

Read the result against the right benchmark

A result becomes commercially useful only when compared with an agreed specification and the regulation or trade standard applicable to the destination. Legal category limits and a buyer’s tighter internal limits are not necessarily the same.

Free acidity alone does not establish extra-virgin classification. Oxidation indicators, UV absorbance, purity tests and sensory assessment for virgin oils may also matter.

Connect the document to sampling

The strongest document trail links the COA to a representative sampling plan: where and when the sample was taken, who sealed it, which lot or tank it represents and whether a retained counter-sample exists.

For a proposed transaction, buyers should agree how pre-shipment and loading samples relate to acceptance, claims and any right to re-test.

What to attach to an RFQ

A reference COA helps communicate the target profile, even when it is not the certificate for the future supply. Mark it clearly as a reference and remove confidential information that is not needed for initial qualification.
